I’m just going to come out and say it…I, Melly Allen, am a “pizza snob“. So when my husband suggests pizza for dinner, he knows he’d better have a good place lined up.

What makes a good pizza for me? It has to be made fresh from the dough up! I love making my own pizza at home, and despite not owning a pizza oven, it always turns out great due to the homemade dough and fresh toppings. But making pizza on a week night is just too time consuming and I don’t often make it due to that.

When my hubs suggested checking out Grimaldi’s Pizzeria, his selling point was they make their pizzas by hand with fresh ingredients and bake them in a coal-burning oven for an extra special pizza experience I’d love. “Experience,” I thought. Well either this man really needs a pizza fix so badly he’d tell me anything, or he really found a pizza spot I’d actually like, hence he’d get pizza more often. So what did I think about our “experience” at Grimaldi’s Pizzeria?

Atmosphere

I really enjoyed dining at Grimaldi’s in Summerlin for many reasons. This is a very family-friendly atmosphere and at the same time my husband and I could enjoy a pleasant date night, child-free evening there too…if we ever get the chance that is.

The staff was very friendly and helpful all the way from drink orders to desserts. Our server was knowledgeable and swift, just what you want when eating out with small children.

My three kids enjoyed watching the cooks toss pizza dough in the air from our table next to the open kitchen. It gave them something to watch and “ooh” and “awe” over. The kids were also given their own balls of dough to entertain themselves with at the table. It’s a thoughtful touch that kids and parents will both enjoy (think peace and quiet).

The decor makes you feel like you’re in an authentic NY style pizzeria. When I return, I’d definitely ask to be seated on the patio and dine alfresco so we can people watch.

Food

Grimaldi's Pizzeria ReviewMy favorite thing to order at restaurants is Caprese Salads; I literally crave them. The Grimaldi’s Caprese Salad ($8) was outstanding! The mozzarella cheese is made fresh and melts in your mouth, as fresh cheese should. The rich, creamy fluffiness of the cheese is heightened by the juicy tomatoes and bite of the basil. Topping off with balsamic and oil completes the dish fantastically. In my opinion, any other restaurant will be hard pressed to top theirs.

One large pizza ($16) was enough for our family of five to split easily. The slices are large, so I cut them down for the younger kids. Again, the freshness of the ingredients made the pizza that much better. The signature coal burning oven leaves the crust crisp and flavorful.

If you have a sweet tooth, Grimaldi’s has desserts that deliver. We tried the signature NY style cheesecake and the seasonal chocolate cheesecake too. Both were delicious, but if I had to choose, I’d go with the original style.
