Pear Walnut Gorgonzola Salad

Although it doesn’t get very cold in Las Vegas beginning Fall season, many of us still love to dish out our Fall recipes. One of our favorite recipes features pears which are technically considered a Fall fruit since most types of pears come into season in September. In keeping with our Meatless Monday tradition, Recess has a fabulous Fall pear recipe from the Organized Cook: Pear Walnut Gorgonzola Salad. This salad will remind you of fall as it consists of three beautifully Fall-colored pears: Red Anjou, Green Anjou and Bosc.

Pears are an excellent source of fiber and a good source of vitamin C for only 100 calories per serving. And, they’re sodium free, fat free, and cholesterol free. – USA Pears

Pear Walnut Gorgonzola Salad

Ingredients:

Spring or Arugula Salad Lettuce – 16 oz.
Pears, 1 each of Bosc (dark yellow), Red Anjou and Green Anjou – sliced
Gorgonzola Cheese Crumbles – 4 oz.
Walnuts, chopped – 2 oz.
Balsamic Vinaigrette or Steakhouse Vinaigrette

Directions:

  • Place lettuce in your prettiest Fall salad bowl
  • Top with sliced pears
  • Drizzle with dressing and toss
  • Top with Gorgonzola cheese and walnuts

Ingredients:

  • Fresh baby spinach lettuce- 16 oz.
  • Pears, 1 each (or any combination of) of Bosc (dark yellow), Red Anjou and Green Anjou- sliced
  • shredded Parmesan cheese- 2 oz.
  • Balsamic Vinaigrette, or Steakhouse Vinaigrette

Directions:

  1. Place spinach lettuce in your prettiest Fall salad bowl
  2. Top with sliced pears
  3. Drizzle with dressing and toss
  4. Top with cheese
