Spring Recipes with Lemon: Poppy Seed Bread with a Lemon Glaze from Wendy’s Hat

When I think of springtime, I often think of all the fresh fruits that come into season: melons, apricots, cherries and oh yes, lemons!  Lemons are perfect because not only do they have a delicious scent, they scream “spring is here!”  What better way to bring spring into your home and onto your kitchen table than to make recipes with lemon.  Recess will be featuring Spring recipes with lemon this week, so get your cart loaded with this awesome citrus fruit and get ready make some delectable dishes that will have give you more reasons to love this season.

Courtesy of one of our Recess contributors, Wendy’s Hat, and staying with our commitment to Meatless Mondays, we are featuring a Poppy Seed Bread with Lemon Glaze recipe.  Wendy’s Hat has some really great recipes on her site and she’s offered to share this one with us so we can in turn share it with you.

Poppy Seed Bread with Lemon Glaze

Ingredients:

1 1/4 cups milk
1/3 cup oil
1 egg
1 teaspoon rum flavoring
2 1/2 cups flour
1 cup sugar
1/4 cup poppy seeds
3 teaspoons baking powder
1 teaspoon salt

1 cup powdered sugar
2 Tablespoons lemon juice

Preheat your oven to 350 degrees F. Start by mixing milk, oil, egg, and rum flavoring together.  In a separate bowl combine flour, sugar, poppy seeds, baking powder, and salt.  Add liquid and dry ingredients together next.

Then grease bottom only of large bread pan or 2 small bread pans and pour mixture into pan and bake for 50 to 60 minutes.

Then mix together powdered sugar and lemon juice to make your glaze.

When finished remove from oven, loosen sides of bread from pan and remove.

 

Poppy Seed Bread with a Lemon Glaze

While bread is still warm, drizzle glaze over your poppy seed loaf.
