Avocado Teacup Bistro Salad From the Organized Cook: Spring Recipes with Lemon Continues

Happy Thursday everyone!  We have another great Spring recipe with lemon, our week long dedication to this citrus fruit that reminds us of our favorite season.  Also keeping in line with eating healthy, the Organized Cook has dished up an Avocado Teacup Bistro Salad that should have your tummy satisfied without the guilt.  Avocados are extremely healthy due to its amazing antioxidant properties.  Read all about the nutritional benefits of avocados from Hand Grown in California’s site.  This recipe is delicious and good for you too!

Avocado Teacup Bistro Salad


  • Artisan lettuce
  • red onion, chopped
  • cucumber, chopped
  • avocado, peeled and diced
  • tomato, diced

Steakhouse Lemon Vinaigrette:

  • olive oil- 1/2 cup
  • white wine vinegar- 4 tbspns
  • lemon juice- 2 tbspns, or juice squeezed from 1/2 of a lemon
  • McCormick Montreal Steak Seasoning- 1 tablespoon


  1. combine all ingredients into salad bowl
  2. drizzle with vinaigrette and toss
  3. fill cups with salad and turn over onto a plate or platter
  4. refrigerate for up to 2-3 hours
  5. remove cup and serve
