Grandma’s Ghoulash Pasta Recipe

On Days Like This, Let’s Go With Quick and Easy

If you have kids that are in a CCSD school, then you know today is the last day of the school year!  For me personally, it’s a super busy crazy day so the last thing on my mind is what to make for dinner.  But since my family has to eat, I have two choices: take out or I make dinner.  If I choose the latter, that means more work for me but if I choose the former, then my family will end up eating something really unhealthy.  So… making dinner it is!  On days like this, I like to make a simple, quick but delicious dinner.  The Organized Cook has a great recipe from her grandmother which she calls Grandma’s Ghoulash.  It has pasta (which makes the kids happy) and meat (which makes the husband happy).  It’s not a complicated recipe and I already have many of the ingredients in my kitchen.  So let’s celebrate the last day of school with Grandma’s Ghoulash!

The Organized Cook’s Grandma’s Ghoulash

Grandma’s Ghoulash

Ingredients

  • ground beef – 1 – 1 1/2 lbs
  • bell pepper, green – 1, cored and diced fine
  • onion, white or yellow – 1 small, peeled and diced fine
  • elbow macaroni – 1 lb
  • crushed or diced tomatoes – 1 15oz. can
  • shredded Monterey Jack or Mozzarella cheese- 1 cup (8 oz.)
  • vegetable oil- 1 tablespoon
  • salt- 1 teaspoon
  • paprika- 1/2 teaspoon
  • pepper- 1 teaspoon

Instructions

  1. Boil macaroni in salted water until tender; drain
  2. Heat oven to 350º
  3. In large skillet, brown meat with a tablespoon oil over medium-high heat until just brown; season with salt, paprika and pepper to taste
  4. Add diced onion, diced bell pepper, cooked macaroni and tomatoes; mix well and transfer to a baking dish
  5. Sprinkle shredded cheese over the top
  6. Bake for 25 minutes
